Baked Beans

In the original cookbook this recipe was on the same page as Microwave Fudge with the following note: These are two different kinds of recipes to be on the same page, BUT I almost forgot the baked bean recipe that I couldn’t find and Debbie emailed the recipe to me. Then I forgot about it. So when I remembered to type it, a friend gave me this EASY fudge recipe so I had to include it.

  • 1 can lima beans - drained
  • 1 can kidney beans - drained
  • 1 can pork and beans
  • 8 slices of cooked bacon, crumble into small pieces; save bacon grease
  • 1/2 cup chopped onions
  • 3/4 cup brown sugar
  • 1/2 cup catsup
  • 1 tablespoon dry mustard

  1. In a little of the bacon grease, brown and cook onions, brown sugar, catsup, and dry mustard.
  2. Put beans and bacon in baking dish and stir in the heated mixture.
  3. Bake at 350 degrees covered for 30 minutes, then uncovered for 15 minutes.
