Cinnamon Rolls

This recipe may be changed to frosted rolls. Just follow the above directions, but eliminate the butter, sugar, and syrup in the bottom on the pans. Use small amount of melted butter in the bottom of the pans and place rolls on top. Bake as above, remove from pans and spread white frosting on top while rolls are still hot. You could use prepared frosting or mix melted butter, a little milk, and powdered sugar together. Wonder how many pans of rolls I have made for your visits??????????

Ingredients

Sweet Roll Dough

  • 2 cups flour + 1 1/2–2 cups
  • 1 package active dry yeast
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 cup shortening
  • 1 tablespoon salt
  • 2 eggs

Cinnamon Rolls

  • Sweet roll dough
  • 1/2 cup sugar
  • 2/3 cup packed brown sugar
  • 2 tablespoons corn syrup
  • 3 tablespoons butter, melted
  • 1 tsp. cinnamon
  • 1/4 cup butter
  • 1/2 cup pecans, if desired

Instructions

Sweet Roll Dough

  1. In large mixer bowl combine 2 cups flour and yeast.
  2. Heat milk, sugar, shortening, and salt till warm (115–120 degrees), stirring to melt shortening.
  3. Add to dry mixture with 2 eggs.
  4. Beat at low speed with electric mixer for 1/2 minute, scraping sides of bowl.
  5. Beat 3 minutes at high speed.
  6. By hand, stir in 1 1/2 to 2 cups flour to make a moderately stiff dough.
  7. Knead on lightly floured surface till smooth (8 to 10 minutes).
  8. If you have a dough hooks for your mixer, you can do the kneading with the mixer.
  9. Shape into a ball.
  10. Place in greased bowl, turning once so all sides are greased.
  11. Cover and let rise till doubled (45 to 60 minutes).

Cinnamon Rolls

  1. Roll each half of dough into 12" by 8" rectangles.
  2. Brush each with half the melted butter.
  3. Combine sugar and cinnamon and sprinkle over dough.
  4. Roll up each piece of dough starting with long side, pinch seams together.
  5. Slice each roll into 12 pieces.
  6. In sauce pan combine brown sugar, 1/4 cup butter, and corn syrup.
  7. Cook and stir just till butter melts and mixture is blended.
  8. Distribute mixture evenly in two 9" by 1 1/2" round baking pans.
  9. Top with pecans.
  10. Place rolls, cut side down, in prepared pans.
  11. Cover and let rise till double (about 30 minutes).
  12. Bake at 375 degrees for 18 to 20 minutes.
  13. Cool about 30 seconds and invert on rack and remove pans.
