Cranberry Ice

Great with a turkey dinner!!!!!


  • 1 cup cranberry juice
  • 1 cup water
  • 1/2 pound marshmallows
  • 2 tablespoons lemon juice


  1. Heat marshmallows and 1/4 cup of the cranberry juice over low heat.
  2. Fold over and over until about 3/4 of the marshmallows are melted.
  3. Remove from heat and continue to fold until all is fluffy.
  4. Let mixture cool, then add remaining 3/4 cup cranberry juice, water, and lemon juice.
  5. Blend well.
  6. Place in refrigerator and let chill.
  7. Stir several times during the chilling period. If you do not keep it mixed up the marshmallows will come to the top.
  8. Freeze in small plastic cups and let them defrost for a few minutes before serving.
