Cranberry Ice
Great with a turkey dinner!!!!!
Ingredients
- 1 cup cranberry juice
- 1 cup water
- 1/2 pound marshmallows
- 2 tablespoons lemon juice
Instructions
- Heat marshmallows and 1/4 cup of the cranberry juice over low heat.
- Fold over and over until about 3/4 of the marshmallows are melted.
- Remove from heat and continue to fold until all is fluffy.
- Let mixture cool, then add remaining 3/4 cup cranberry juice, water, and lemon juice.
- Blend well.
- Place in refrigerator and let chill.
- Stir several times during the chilling period. If you do not keep it mixed up the marshmallows will come to the top.
- Freeze in small plastic cups and let them defrost for a few minutes before serving.
